What's For Dinner???

A while back I found this really good recipe for chicken enchiladas. It's very simple to make, tastes awesome and only calls for five ingredients. The family loves it. I usually make mexican rice and refried beans to go with it and sometimes a sidedish of guacamole. Here is the recipe, I hope you and your family will enjoy it as much as we do.

Rotel Chicken Enchiladas

1/2 pkg. boneless skinless chicken tenders
1 pkg. cream cheese
1 can rotel tomatoes
1 med. box Velveeta cheese
corn tortillas

Boil the chicken tenders until done; drain and shred. Mash together in a bowl the cream cheese with the shredded chicken until completely mixed together. I usually squish them together with my hands, it works better that way. Soften the tortillas in oil as you would for enchiladas. Fill each tortilla with the chicken/cream cheese mixture. Set aside. Cube the velveeta cheese and add rotel in a microwave safe bowl, melt the cheese and velveeta (as you would do when making rotel cheese dip). When the cheese/rotel mixture has melted, pour over top of wrapped tortillas. Bake in 325% oven until heated through and bubbly.
